I’m typically a homemade, from-scratch kind of baker. I’m not sure why, I guess I just like to torture myself. I don’t particularly enjoy baking. I am more of a cook. Baking completely from scratch can be tedious if I’m not in the mood.

That is why these Cream Filled Cupcakes are so great. These cupcakes are semi-homemade with box cake mix. The filling is a blend of frosting and marshmallow fluff. And the frosting is homemade. Of course, you can use store bought frosting if you prefer. Or heck, you can use your favorite chocolate cupcake recipe if you enjoy baking from scratch. Either way these Cream Filled Cupcakes will be a crowd favorite!

This recipe is one of many semi-homemade desserts from my friend, Hayley’s new cookbook. Out of the Box Desserts is filled with indulgent treats that don’t require you to spend hours in the kitchen.

These cupcakes were dangerous for me to have around my house. Cream filled anything and I am there!

Here is a photo from my WonkyWonderful Instagram. I literally stuffed my face with cupcakes. . .breakfast, lunch and dinner! Hey, I didn’t say I was proud of it. I’m just saying it happened.

Cream Filled Cupcakes
Print
Cupcakes
  1. 1 Box Chocolate Cake Mix
  2. 1/2 Cup Oil
  3. 1 Cup Buttermilk
  4. 3 Eggs
  5. 1 (3.4 oz) Box instant Chocolate Pudding Mix
Filling
  1. 1 (7oz) Jar Marshamallow Fluff
  2. 1 Cup Vanilla Frosting (I used store bought)
Frosting
  1. 1/2 Cup Room Temperature Butter
  2. 1/2 Cup Cocoa Powder
  3. 1 teaspoon Vanilla Extract
  4. 3-4 Cups Powdered Sugar
  5. 1/3 Cup Whole Milk
Topping
  1. Sprinkles
Cupcakes
  1. Preheat oven to 350°F
  2. Line 18 muffin tins with paper liners.
  3. Beat cake mix, oil, buttermilk, eggs and dry pudding mix with electric mixer until fully combined. Fill each muffin liner 3/4 full with batter. Bake 15-18 minutes or until a toothpick can be inserted and removed clean. Transfer to rack and allow to cool completely before filling and frosting. Using a small sharp knife, cut a hole into the top of each cupcake and remove the cores.
Filling
  1. Mix marshmallow fluff and frosting. Transfer to a quart sized plastic baggie and cut the tip off of one bottom corner. Pipe the filling into the cupcakes. Cool cupcakes in refrigerator while making the frosting.
Frosting
  1. (Store bought chocolate can be used as a substitute)
  2. Using electric mixer; beat butter, cocoa and vanilla. Add powdered sugar 1 cup at a time. Add milk if frosting is too stiff. Microwave frosting 15-20 seconds. Stir until smooth. Dip each cupcake into frosting glaze. Top with sprinkles. Store in refrigerator.
Notes
  1. I think these cupcakes are best when eaten cold.

Fig and Prosciutto Flatbread Pizza

Ingredients
  1. 1 Flatbread Crust
  2. Olive Oil - for drizzling
  3. 1 Cup Crumbled Goat Cheese
  4. 5 Fresh Figs - quartered
  5. 2 Slices Prosciutto - cut into small strips
  6. Handful Fresh Arugula
  7. Pinch Flaked Sea Salt
  8. Honey - for drizzling
Instructions
  1. Preheat oven to 350°F
  2. Place flatbread crust on pizza stone or baking sheet. Generously drizzle with olive oil. Bake 5-7 minutes or until edges are slightly crisp.
  3. Remove from oven. Top with goat cheese and figs. Return to oven and bake 4 minutes. (optional: broil an extra 2 minutes for meltier cheese and caramelized figs)
  4. Remove from oven. Top with arugula, prosciutto, flaked salt and a drizzle of honey.
  5. Slice and serve.

Brookside Fruit & Nut Bars

So what is my unexpected ‘secret’? I had to really think about this one because I tend to be the cautious, thoughtful type. My motto is safety first! {no really, it’s true.}

But, I will eat just about anything. And I mean anything! I will taste and try anything no matter how disgusting or bizarre it seems. I may not like everything I try but I will at least sample it. I’ve eaten gator, shark, crickets, mealworms, snails, frog legs, crawdads, armadillo and any strange alien-looking fruit I can get my hands on. And that is just a few examples off the top of my head. Peach Smoothies with Wild Blueberry Swirl

Peach Layer
  1. 2 Fresh Peaches - pitted and quartered
  2. 1 Cup Whole Milk Plain Yogurt
  3. 1/2 teaspoon Vanilla Extract
  4. 1/4 Cup Whole Milk
  5. 1 Tablespoon Honey
Blueberry Layer
  1. 1/2 Cup Frozen Wild Blueberries
  2. 1 Tablespoon Honey
  3. 1/4 Cup Water
Instructions
  1. Process peach layer ingredients in blender until smooth.
  2. Pour into serving glasses.
  3. Process blueberry layer in blender until smooth.
  4. Spoon over the top of the peach layer then give it a gentle stir to blend colors.
  5. Serve and Enjoy!

  1. Makes approximately 4 cups.

It is my favorite time of year, Fig Season! If you have an abundance of fresh figs or just like boozy fruit try this Amaretto Soaked Figs Recipe. Serve over ice cream or yogurt for a unique and flavorful dessert!

Every August I get a little Fig Crazy! If you are obsessed with figs {like me} you know what I’m talkin’ about. I go to my farmer’s market very early every Saturday to buy several pounds of fresh figs. And those only last about two days. I devour them without an ounce of self restraint. In fact, I have to buy double my usual amount if I want to create a recipe.

So now you know that I make myself sick off of figs every year. Another fun fact about me is that amaretto and vanilla are a couple of my favorite flavors. I brought together the ultimate trio to make this Vanilla Amaretto Soaked Figs Recipe!

And. . . it’s just bonus points that this jar looks like something you could find in Dr. Frankenstein’s laboratory. I love creepy looking food!

I enjoy these Amaretto Soaked Figs over plain whole milk yogurt for a snack or dessert. But they are fantastic over vanilla ice cream too.

Vanilla Amaretto Soaked Figs
Print
Ingredients
  1. 12 Fresh Figs - halved lengthwise
  2. 1 Rodelle Vanilla Bean - split and opened
  3. 1 Cup Amaretto
  4. 1 Cup Water
  5. 1 Cup Sugar
Instructions
  1. Fill large mouth mason jar with figs. Top with vanilla bean.
  2. In medium saucepan over medium heat; mix amaretto, water and sugar. Bring to a boil while occasionally whisking.
  3. Gently boil for 5 minutes while whisking. Mixture will reduce and become slightly syrupy.
  4. Remove from heat and let cool 5-10 minutes.
  5. Pour liquid over figs. (The mason jar cannot be cold!)
  6. Seal jar with lid and refrigerate overnight. (or at least 4 hours)
  7. Eat within 4-5 days.

Slow Cooker Pulled Pork Cuban Sandwiches

These Slow Cooker Pulled Pork Cuban Sandwiches are everything! Meaty, cheesy, briny deliciousness.

The slow cooker pulled pork is super simple to make. Pork shoulder, Coca-Cola and a few spices cook on low for 8 hours. Done.

I removed the bone, shredded the meat then removed the meat from the juice for my sandwiches. You can always remove meat from the juice and toss with your favorite barbecue sauce (or my SheBang! Barbecue Sauce). Or, mix 1 Tablespoon cornstarch with 1 Tablespoon water then add to slow cooker at the end of cooking to thicken sauce and you can do pretty much anything you want with the pork after that.

But, I suggest these Pulled Pork Cuban Sandwiches because they are BOMB!

I may have been a tad heavy handed with the peperoncinis . . . my ears were burning about half way through my sandwich. Use however many you prefer.

Cuban sandwiches are typically made with swiss cheese. Swiss cheese isn’t my personal favorite so I used havarti instead. I like the flavor of havarti better and it gets super melty!

Start with Coca-Cola slow cooker pulled pork then add cheese, peperoncinis, pickles, mustard and bread. These oven baked sandwiches are perfect for feeding a crowd!

Once you have your pulled pork it is just a matter of assembling the sandwiches, wrapping with foil then baking until hot and melty.

I do have to thank Jeff Mauro (The Sandwich king) for inspiring this recipe. I saw his recipe for Slow Cooked Cuban Sandwiches in Food Network Magazine and had to make my own version. He is a sandwich genius after all.

Slow Cooker Pulled Pork Cuban Sandwiches

Pulled Pork
  1. 5 Pound Pork Shoulder Roast (bone in)
  2. 12 ounce can Coca-Cola
  3. 1 teaspoon Garlic Powder
  4. 1/2 teaspoon Cumin
  5. 1/4 teaspoon Red Pepper Flakes
  6. 1/2 teaspoon Salt
  7. 1/4 teaspoon Pepper
  8. 1/2 teaspoon Dried Orange Peel (optional)
Sandwiches
  1. French Bread Rolls
  2. Yellow Mustard
  3. Sliced Dill Pickles
  4. Sliced Peperoncinis
  5. Sliced Havarti or Swiss Cheese
Pulled Pork
  1. Place pork roast in large slow cooker. Mix Coca-Cola, garlic powder, cumin, red pepper flakes, salt, pepper and orange peel. Pour mixture over pork roast. Cook on low for 8 hours. Remove and discard bone then shred meat using two forks. Discard remaining liquid in slow cooker. Taste and season with additional salt/pepper to preference.
Sandwiches
  1. Preheat oven to 375°F
  2. Place each french bread roll onto foil large enough to wrap sandwich securely. Open rolls and spread mustard on both sides. Layer sliced pickles, shredded pork, peperoncini and 2 cheese slices. Close sandwiches and wrap tightly with foil. Transfer to baking sheet and bake for 15 minutes.

I have been wanting to add a baked beans recipe to my site for a while now. When I was thinking about how I could make regular beans more interesting and take it up a notch I decided . . . More Pork! This favorite comfort food is taken to the next level with pulled pork AND bacon. I also use three types of beans to create a lot of texture. The rest is the usual, a little bit of this . . . a little bit of that.

Double Pork Baked Beans

Ingredients
  1. 1 pound Thick Cut Bacon
  2. 1 Small White Onion - chopped
  3. 2 Cups Pulled Pork
  4. 2 Cups Organic Ketchup
  5. 1/4 Cup Water
  6. 1 teaspoon Garlic Powder
  7. 1/2 teaspoon Ground Pepper
  8. 1/4 Cup Brown Sugar
  9. 2 Tablespoons Apple Cider Vinegar
  10. 2 teaspoons Worcestershire Sauce
  11. 1 Tablespoon Yellow Mustard
  12. 1 Tablespoon Dark Molasses
  13. 1/2 teaspoon Tabasco Sauce (or more for spicy beans)
  14. 2 (15 oz) Cans Red Kidney Beans - drained/rinsed
  15. 1 (15 oz) Can White Beans - drained/rinsed
  16. 1 (15 oz) Can Pinto Beans - drained/rinsed
Instructions
  1. Preheat oven to 350°F
  2. Mix ketchup, water, garlic powder, pepper, brown sugar, vinegar, Worcestershire sauce, mustard, molasses and Tabasco. Set aside.
  3. In large pot; fry bacon until firm but not crisp. Transfer from pot to plate lined with paper towels. Leave bacon grease in pot. Roughly chop bacon into bite sized pieces.
  4. Add chopped onions to pot with bacon grease. Cook over medium heat while stirring for 2-3 minutes or until onions are translucent.
  5. Stir in pulled pork and reduce heat to medium/low.
  6. Add beans, premixed sauce and half of the cooked bacon. Stir while cooking for 5 minutes.
  7. Transfer to large casserole dish, top with remaining bacon and cover with foil.
  8. Bake for 30 minutes. Remove foil and bake uncovered for 20 more minutes.

I used store bought Dulce de Leche for the caramel. I like that it has a thick consistency and strong flavor. You can find this in many stores, sometimes in the Latin section. Salted Caramel Pecan Cheesecake Dip
Print
Dip
  1. 8 ounces Cream Cheese - softened
  2. 1 Cup Marshmallow Creme
  3. 1/2 Cup Powdered Sugar
  4. 2 Tablespoons Dulche de Leche
Topping
  1. 1/2 Cup Chopped Pecans
  2. 2 Tablespoons Dulche de Leche
  3. 1/2 teaspoon Milk
  4. Maldon Salt Flakes
Dip
  1. Mix cream cheese, marshmallow creme, powdered sugar and dulche de leche until fully combined. Transfer to serving bowl.
Topping
  1. Top dip with chopped pecans.
  2. In microwave safe bowl; microwave dulche de leche 10-15 seconds. Stir in milk. Drizzle over dip and pecans.
  3. Sprinkle with salt flakes.
  4. Serve with apples and cookies.
Notes
  1. Makes approximately 2 cups

I’ll keep this post short because I don’t think I need to convince anyone that guacamole is delicious. Especially a guacamole recipe that adds cheddar cheese, bacon and jalapeños! It is as good as you imagine and it is super easy to make too.

If you love jalapeño poppers and guacamole then chances are you are going to devour this guac. I happen to love almost anything with those jalapeño popper flavors. And guac, salsa and chips are a major weakness of mine.

  1. 3 Avocados - skin & seed removed, mashed
  2. Juice of 1/2 Lime
  3. Generous Pinch Salt
  4. 1/2 Cup Thick Shredded Cheddar Cheese
  5. 1/3 Cup Cooked Chopped Bacon (about 6 ounces raw bacon, cooked)
  6. 2 Tablespoons Finely Chopped Jalapeño Pepper (more if you like it spicy)
Instructions
  1. Combine all ingredients until desired consistency. Top with bacon, cheese and flaked salt.
  2. Store leftovers in container with plastic wrap pressed directly on top of guac to prevent browning.

What can I say? I love to combine meals into one ahhhhhMazing dish. It’s kinda my thing. I get especially excited about it when it is two of my favorite comfort foods. It doesn’t get much more comforting than macaroni & cheese and pepperoni pizza! And, I decided I do not use tortellini nearly enough so I tossed those into this recipe too.

Making this Cheese Tortellini Pepperoni Pizza Casserole is relatively simple. I started with my usual mac & cheese sauce base, added cooked tortellini, layered on the pizza toppings then baked.

This dish is all about The Cheese. The sauce is made with Velveeta and a three cheeses blend. It is topped with shredded mozzarella cheese for that melty top. And I serve it with powdered parmesan cheese (like the kind you get with you pizza) . . . because that is how we do it at my house! MORE CHEESE, PLEASE!!!

Cheese Tortellini Pepperoni Pizza Casserole

Ingredients
  1. 16 ounces Cheese Stuffed Tortellini - cooked according to package instructions
  2. 2 Garlic Cloves - chopped
  3. 1 Tablespoon Olive Oil
  4. 2 Cups Whole Milk
  5. 1/2 teaspoon Dry Italian Seasoning
  6. 8 ounces Original Velveeta Cheese - cubed
  7. 2 Cups Shredded Cheese Blend (a blend that includes mozzarella, like an Italian blend)
  8. 2 ounces Pepperoni - quartered
  9. 1/2 Cup Pizza Sauce
  10. Sliced Pepperoni - for topping
  11. 1 Cup Shredded Mozzarella Cheese
Instructions
  1. Preheat oven to 375°F
  2. Prepare and measure all ingredients before beginning.
  3. In 3 quart pot over medium heat; cook garlic in oil while stirring for 1 minute or until golden.
  4. Add milk and Italian seasoning. Stir and heat until milk begins to steam.
  5. Reduce heat then add Velveeta and shredded cheese blend. Stir until melted.
  6. Turn off heat but keep pot on burner. Add cooked tortellini and quartered pepperoni. Stir 1 minute then transfer mixture to casserole dish.
  7. Dollop pizza sauce on top and swirl into cheesy tortellini without fully mixing.
  8. Layer slices of pepperoni on top then sprinkle with mozzarella cheese.
  9. Bake uncovered on center rack for 25 minutes. Broil on high for 3-4 minutes to brown.

When I began testing this recipe it was for a fritter patty shape. I played around with several different shapes and decided the tots were much tastier. They have the perfect amount of crisp outer crust with a soft and chewy inside. Plus, tots are so dippable and fun to eat!

Form into tots then roll in breading. I do this before I begin frying so that I am not trying to do too much at once. You don’t want to be distracted and burn your tots.

Cheesy Zucchini Tater Tots

Tots
  1. 1 Cup Peeled, Shredded White Potato (1-2 potatoes)
  2. 2 Cups Shredded Zucchini (1-2 zucchini)
  3. 1 Cup Shredded Cheddar Cheese
  4. 2 Large Eggs - lightly beaten
  5. Small Pinch Salt/Pepper
  6. 3 Tablespoons Flour
  7. 3 Tablespoons Panko Bread Crumbs
  8. 1 teaspoon Garlic Powder
Breading
  1. 1/2 Cup Flour
  2. 1/2 Cup Panko Bread Crumbs
  3. Pinch Salt/Pepper
  4. 3/4 Cup Thrive® Algae Oil for frying
Tots
  1. Use a large stand up grater to shred the zucchini and potatoes. Transfer to a cutting board lined with paper towels, place more paper towels on top and press down firmly to absorb any moisture. Transfer to large bowl then add shredded cheese and eggs. Stir gently until evenly coated with egg.
  2. Mix salt, pepper, flour, panko and garlic powder. Gradually add dry ingredients to zucchini mixture while stirring.
  3. Mix breading ingredients in a shallow dish.
  4. Form zucchini mixture into tater tot shapes. (This recipe will make approximately 20 tots depending on size) Roll each tot in breading mixture until lightly coated. Transfer to cutting board or platter.
  5. In large cast iron skillet, heat oil over medium for 5 minutes. Drop a small piece of zucchini in oil, once it gets a good sizzle the oil is ready.
  6. Fry tots in two batches so the pan does not get over crowded. Fry and rotate tots in oil until all sides are golden brown. Transfer fried tots to a plate lined with paper towels.
  7. Serve topped with fresh parsley and lemon zest.
  8. To make the Cajun Dip; mix sour cream, Cajun spice, lemon zest, hot sauce and worcestershire sauce to desired flavor and consistency.
Notes
  1. These tots reheat well. Just wrap in foil and bake at 400°F for about 10 minutes.
  2. If you prefer oven baked tots instead of fried, place prepared tots on baking sheet sprayed with nonstick then bake at 400°F for 25 minutes. Flip half way through.

This is the kind of hearty breakfast that will warm you up on chilly Fall or Winter mornings. This Steel Cut Oats Recipe has some holiday flavors without being IN YOUR FACE. Don’t get me wrong I enjoy gingerbread, snickerdoodle and pumpkin spice. . . but I do not want to eat meals with those flavor combos the entire season.

Speaking of chilly mornings I have big news, I am moving up to the mountains! I have lived in a super hot California valley for over 10 years and the older I get the more I HATE the triple digit heat here. I just cannot take another summer of 115°. And luckily I don’t have to. My new home is up in the pine trees where the summers are mild and the winters are snowy. In fact, I’ll be living at the base of a volcano! Wish me luck.

I am so looking forward to those chilly mornings curled up under a blanket enjoying warm comforting meals like this.

These oats are very simple to make. I use my large sauté pan to cook the oats then just add whatever toppings I am in the mood for.

I topped these Bob’s Red Mill Steel Cut Oats with oranges, pecans, maple syrup and Stonyfield Whole Milk Yogurt. I don’t like to cook my oats in milk because it can get a weird separated look. So I make my oatmeal creamy with a dollop of yogurt.

So Good.

Oatmeal
  1. 1/2 Cup Fresh Squeezed Orange Juice
  2. 1 Cup Water (more to preferred consistency)
  3. Pinch Sea Salt
  4. 1/2 Cup Bob's Red Mill Steel Cut Oats
  5. Zest of 1 Orange
  6. 1/2 Cup Dried Cranberries
Toppings
  1. Stonyfield Whole Milk Yogurt
  2. Maple Syrup
  3. Orange Segments
  4. Pecans
  5. Orange Zest
  6. Flaked Salt
Instructions
  1. In large sauté pan; bring fresh orange juice, water and salt to a gentle boil.
  2. Add steel cut oats, orange zest and dried cranberries. Reduce heat to medium/low, cover and cook for 10 minutes. Stir occasionally.
  3. Test the consistency. At this point it will still be quite chewy. For creamier oats add 1/2 cup water and cook 5-7 minutes.
  4. Serve hot with toppings.

Ingredients
  1. 16 ounces Gluten Free Fusilli Pasta - cooked according to package instructions
  2. 2 Cups Sour Cream
  3. 1/2 Cup GF Mayonnaise
  4. 1 teaspoon Garlic Powder
  5. 1 teaspoon Onion Powder
  6. 1/2 teaspoon Pepper
  7. 1/2 teaspoon Sea Salt (more to taste)
  8. 2 teaspoons Dried Parsley
  9. 16 ounces Frozen Chopped Spinach - thawed and drained
  10. 5 ounces Sliced Water Chestnuts - drained and chopped
Instructions
  1. Prepare pasta according to package instructions.
  2. Press thawed spinach into mesh strainer to remove any liquid. Transfer to paper towels and press to remove any remaining liquid.
  3. Combine all ingredients.
  4. Serve cold.

Biscuits that are cheesy, delicate and light as a feather. . . what more could you want? The secret to these Cheddar Bay Drop Biscuits is yeast! I know, WHAT!?!? Who would put yeast in a biscuit? I can’t take credit for the idea, it is inspired by a vintage recipe for Angel Biscuits. I think they are called angel biscuits because they are so light they could float up to the heavens.

When it comes to yeast, I use Red Star Platinum Yeast. I can depend on Red Star Yeast because of it’s quality. There is nothing worse than getting started on a recipe only to learn that your yeast is a dud. I always proof my yeast in warm water with a pinch of sugar. Red Star Yeast always delivers but I still proof. Hey, I have trust issues from the times I used other yeast brands that let me down.

Now this is very important, do not make these biscuits too huge. You will end up with giant biscuits mounds if you do. They will still taste great but won’t be much to look at.

Measure a 1/4 cup of dough and form it into a mini hamburger shape with a flattened top.

Make sure that baking sheet is generously greased. As a trick to prevent the bottoms from getting too brown I place a large baking sheet under the baking sheet with the biscuits. This will get you those perfectly browned bottoms!

Ingredients
  1. 1 (1/4oz) package Red Star Platinum Yeast
  2. 1/3 Cup Warm Water
  3. Pinch Sugar
  4. 2½ Cups All Purpose Flour
  5. 3 teaspoons Baking Powder
  6. 1/2 teaspoon Baking Soda
  7. 2 Tablespoons Sugar
  8. 1 teaspoon Old Bay Seasoning
  9. 1/2 Cup Butter - cold & cut into cubes
  10. 1 Cup Buttermilk
  11. 1½ Cups Shredded Sharp Cheddar Cheese
  12. 1/2 Cup Chopped Fresh Parsley
  13. 3 Tablespoons Melted Butter
  14. 1/4 teaspoon Old Bay Seasoning
  15. Flaked Sea Salt
Instructions
  1. Preheat oven to 425°F
  2. Combine Red Star Platinum Yeast, warm water and pinch of sugar. Set aside for 5 minutes or until thick and foamy.
  3. In large bowl; mix flour, baking powder, baking soda, sugar and Old Bay Seasoning.
  4. Use a pastry blender or two butter knives to cut cold butter into dry ingredients until butter is the size of peas.
  5. Add buttermilk then yeast mixture. Stir in cheddar cheese and parsley.
  6. Do not over mix. Using hands mix dough until it just comes together into a large ball.
  7. Generously spray baking sheet with nonstick. Place a second baking sheet underneath to prevent bottoms from getting too brown.
  8. Measure 1/4 cup of dough, form into mini patty shapes that are flat on top.
  9. Transfer to baking sheet. Space each biscuit 2 inches apart.
  10. Mix melted butter and 1/4 teaspoon Old Bay Seasoning.
  11. Bake biscuits 10 minutes. Brush with melted butter and sprinkle with flaked salt. Bake 2 more minutes or until light golden brown.
  12. Serve warm.

  1. Makes approximately 14 biscuits
  2. *Store any remaining dough in refrigerator.

  5. 1/2 Cup Uncooked Spaghetti Noodles - broken into pieces
  6. 1/2 Cup Jasmine Rice
  7. 2 Cups Low Sodium Chicken Stock
  8. 1 teaspoon Garlic Powder
  9. 8 ounces Frozen Broccoli Florets - thawed
  10. 6 ounces Horizon Organic Cheddar Cheese Shreds
Instructions
  1. Over medium/high heat in large pan; cook chicken with frying oil, salt and pepper until browned and cooked through. Remove from pan and set aside.
  2. Reduce heat to medium and allow pan to cool for 1 minute.
  3. Melt butter in pan and stir in pasta. Continue to stir and fry pasta in butter until golden brown. Add rice and toast for 20-30 seconds.
  4. Add stock and garlic powder. Bring to a boil, reduce heat to medium/low, cover and cook for 8 minutes (stir occasionally).
  5. Add broccoli florets, cover and cook 2 more minutes. (check that the rice is done)
  6. Add cooked chicken and cheese.
  7. Remove from heat and serve.

This Zesty Cajun Shrimp Pasta really is easy to make. In fact, on my lazier days I don’t even bother with the carrots, celery and onions. They do add great flavor and texture but the shrimp pasta is fantastic with just a creamy sauce as well.

Using quality ingredients is most important. I use bucatini pasta, which is a thick spaghetti style noodle that is hollow, so the sauce can really get soaked into the pasta and the consistency is great.

I also make sure to use meaty wild-caught shrimp, fresh lemon, salt-free Cajun seasoning and DaVinci Pinot Grigio.

Salt-free Cajun seasoning is very important. There is nothing worse than preparing a fabulous dish that gets overwhelmed by salt in the seasoning. If you are unable to find salt-free Cajun seasoning at your local store you can check out these DIY recipes and just omit the salt: Cajun Spice Mix by Mom On Timeout or Homemade Cajun Seasoning by Growing Up Gabel.

Zesty Cajun Shrimp Pasta

Ingredients
  1. 16 ounces Bucatini Pasta
  2. 1 Lb. Deveined Shelled Wild-Caught Shrimp
  3. 2 Tablespoons Olive Oil
  4. 2 Tablespoons Butter
  5. 1 Celery Stalk - finely chopped
  6. 1 Carrot - finely chopped
  7. 1/2 White Onion - finely chopped
  8. 2 Garlic Cloves - finely chopped
  9. 4 ounces Cream Cheese - cubed
  10. 1 Cup Whole Milk
  11. 2 teaspoons Salt-free Cajun Seasoning
  12. 1/2 teaspoon Worcestershire Sauce
  13. 1/4 Cup DaVinci Pinot Grigio
  14. Zest from 1 Lemon
  15. Fresh Chopped Parsley
  16. Flaked Maldon Salt
Instructions
  1. Prep all ingredients before beginning.
  2. Boil pasta according to package instructions. Drain and set aside.
  3. In large pan, cook shrimp in olive oil over medium heat until pink and curled into a loose 'C' shape. Remove from pan and set aside with the pasta.
  4. Melt butter in pan over medium heat. Add celery, carrot, onion and garlic. Cook while stirring for 5-6 minutes or until carrots have softened.
  5. Add cream cheese and milk. Whisk continuously until smooth.
  6. Stir in Worcestershire sauce and seasoning.
  7. Gradually whisk in wine. Whisk and simmer until thickened to a thin sauce consistency.
  8. Turn off heat. Stir in pasta and shrimp. Toss until evenly coated.
  9. Serve topped with lemon zest, parsley and salt.

  1. Serves 4-6

I saw these creepy Royal Icing Chopped Fingers at the craft store and had to buy them. Had To! It reminded me of years back when people kept finding severed fingers in the chili from a certain fast food chain. What’s with all the fingers in the chili!?!?! <<< said in my best Seinfeld voice.

Seriously though, I love a good Halloween treat especially if it is gruesome. Halloween is my favorite holiday with Christmas coming in at a close second. Luckily my daughter is as morbid as I am because she was obsessed with these Halloween Brownies.

While the end result is a bit startling, the brownies themselves are to die for! Super chocolaty, super fudgy brownies. Perfection.

Brownies
  1. 1/2 Cup Butter - melted
  2. 1/2 Cup Unsweetened Dutch Baking Cocoa
  3. 2 Eggs - lightly beaten
  4. 1 Cup Dixie Crystals Sugar
  5. 1 teaspoon Pure Vanilla Extract
  6. 3/4 Cup All Purpose Flour
  7. 1/2 teaspoon Baking Powder
  8. 1/2 teaspoon Kosher Salt
Glaze
  1. 1 Cup Powdered Sugar
  2. 7-8 teaspoons Heavy Cream
Toppings
  1. Red Sparkle Sugar Gel
  2. Royal Icing Chopped Finger Cupcake Toppers
Brownies
  1. Preheat oven to 350°F
  2. Mix melted butter and cocoa powder.
  3. Add eggs while stirring then add sugar and vanilla.
  4. Stir in four, baking powder and salt until mixture is just combined.
  5. Transfer to a generously greased 8x8 pan.
  6. Bake for 30-35 minutes.
  7. Cool before glazing.
  8. Remove brownies from pan and cut into squares.
Glaze
  1. Mix powdered sugar and heavy cream until mixture becomes a thick smooth consistency.
  2. Spoon glaze over each brownie.
Toppings
  1. Squeeze 3-4 drop of Red Sparkle Sugar Gel onto glaze. Swirl using a toothpick.
  2. Place Royal Icing Chopped Fingers on top of brownies. Or, use a toothpick to create a hole in the side of brownies and gently insert fingers halfway.
Notes
  1. Serves 9

Easy Rice Pilaf
Print
Ingredients
  1. 2 Tablespoons Unsalted Butter
  2. 1 Cup Vermicelli Pasta - broken into 1/2 inch pieces (I used bucatini)
  3. 1 Cup Jasmine Rice
  4. 4 Cups Water
  5. 2 Tablespoons Chicken Base*
  6. 1/8 teaspoon Crushed Red Pepper Flakes (optional)
  7. 1 Tablespoon Dried Italian Seasoning
  8. Fresh Chopped Parsley
  9. Fresh Thyme
Instructions
  1. Melt butter in large pan over medium/high heat.
  2. Stir in pasta and cook for 3 minutes while stirring or until pasta is golden brown.
  3. Add rice, water, chicken base, red pepper flakes and Italian season.
  4. Bring to a boil, reduce heat to low and cover.
  5. Simmer for 15 minutes. Test rice for doneness. If rice is not yet tender, continue cooking and add water as needed.
  6. Stir in fresh parsley and thyme. Salt and pepper to taste. Cook 1-2 more minutes or until liquid is absorbed.
  7. Remove from heat and let sit 5 minutes.
  8. Serve.
Notes
  1. *I really love the Better Than Bouillon brand.
  2. This recipe makes enough for a family of 4-6. I now cut this recipe in half to serve 2-3. The only difference is 1-2 minutes less needed for cook time.

It is no secret that I am a big fan of coffee and easy breakfast recipes. I need that cup of coffee in the morning. I’m pretty sure the day does not officially begin until I take that last sip of coffee. So you can imaging that I need quick, simple recipes like these Baked French Toast Sticks. Just get these in the oven then sit back, relax and drink coffee.

Silk Vanilla Almond Creamer and International Delight Simply Pure Vanilla Creamer are two of my favorites. I decided to try the new Horizon Organic Sweet Buttercream Dairy Creamer and now I can say I have a third favorite!

Baked French Toast Sticks
Print
Ingredients
  1. 5 Slices Thick Cut Texas Toast Bread
  2. 3 Large Eggs
  3. 1/2 Cup Heavy Cream
  4. 2 Tablespoons Sugar
  5. 1 teaspoon Ground Cinnamon
  6. 1 teaspoon Vanilla Extract
Instructions
  1. Preheat oven to 400°F
  2. Cut bread into thirds, lengthwise.
  3. Mix eggs, cream, sugar, cinnamon and vanilla.
  4. Dip bread sticks into mixture and let sit for 20 seconds each side.
  5. Remove the excess and transfer sticks to rimmed baking sheet that is generously sprayed with nonstick.
  6. Allow toast sticks to sit 5-10 minutes to absorb liquid.
  7. Bake for 10 minutes. Flip toast sticks and bake 10 more minutes.
  8. Serve dusted with powdered sugar and maple syrup for dipping.

I will always go for a savory breakfast over sweets. . . unless we are talking about donuts. But, other than donuts I am a savory breakfast gal all the way! This Fall Breakfast Hash Recipe is my idea of heaven. It is super easy to make, take just 4 ingredients, fills you up and tastes amazing! I make this breakfast recipe even easier with precut butternut squash.

While the butternut squash and sweet onions are fantastic, the bacon and eggs are the stars. Bacon is kind of always a star and the fried eggs with the runny yolks are perfection. The yolk acts as a sauce for this dish.

I have been a fan of The Happy Egg Co. for quite some time. If I’m being totally honest it was the happy yellow packaging that first drew my attention like a bright shining sun peaking through grey clouds. Once I tasted the eggs and learned a little about the company I was sold!

Free range eggs come from hens are free to roam outside daily. In my personal opinion happy hens lay happy (tasty) eggs!

Butternut Squash & Bacon Fall Breakfast Hash

Ingredients
  1. 4 Slices Bacon - cut into chunks
  2. 1 Sweet Onion - chopped
  3. 3 Cups Butternut Squash - cubed
  4. 4 Large Free Range Eggs
Instructions
  1. In large skillet, cook bacon and onions over medium/high heat (stir occasionally) until bacon begins to crisp and onions are translucent.Remove from pan and set aside. Leave bacon grease in pan.
  2. Add butternut squash to pan in an even layer. Cook over medium/high heat until browned and tender. (stir occasionally and add oil if needed)
  3. Return the bacon and onions to the pan. Cook 5 more minutes.
  4. Make 4 spaces for the eggs. Crack and drop eggs in spaces then cover. Cook eggs to preference.
  5. Remove from heat. Salt and pepper to taste. Serve.
Notes

Glazed Candied Bacon

Ingredients
  1. 1 pound Thick Cut Bacon
  2. 1/2 Cup Musselman's Apple Butter
  3. 2 Tablespoons Maple Syrup
  4. 1 teaspoon Hot Sauce (optional)
Instructions
  1. Preheat oven to 350°F
  2. Line rimmed baking sheet with foil. Place a metal rack on top and spray with nonstick.
  3. Layer bacon evenly on top of rack.
  4. Bake for 30-35 minutes or until edges begin to lightly crisp.
  5. Mix apple butter, maple syrup and hot sauce.
  6. Remove bacon from oven and brush each slice with glaze. Flip bacon slices and brush with glaze.
  7. Bake for 15-20 minutes or until sizzling and dark (but not burnt). Keep a close eye the last 5 minutes as bacon can burn quickly.
  8. Remove and allow to cool. Bacon will get crispier as it cools.
  9. Store in refrigerator.
